Ingredients
72 mini Nilla Wafer cookies
1 (7 oz) bag Rolos, unwrapped
8 oz chocolate chips (or melting wafers)
1 tsp coconut oil (optional, for thinning the chocolate)
Instructions
Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
Assemble the Cookie Layers: Place 36 mini Nilla Wafer cookies on the prepared baking sheet. Place one Rolo candy in the center of each cookie.
Soften the Rolos: Bake for 90 seconds. Do not bake longer—you want the Rolos to be slightly soft but not melted.
Add the Top Cookie: Remove the baking sheet from the oven and immediately place another Nilla Wafer cookie on top of each Rolo. Gently press down to sandwich the Rolo between the cookies.
Chill: Place the baking sheet in the refrigerator for 15-20 minutes, or until the Rolos have set.
Melt the Chocolate: In a microwave-safe bowl or double boiler, melt the chocolate chips (or melting wafers) with the coconut oil (if using) until smooth.
Dip the Cookies: Dip each cookie sandwich into the melted chocolate, using a fork or chocolate dipper tool. Tap off any excess chocolate and place the cookies back on the parchment paper.
Chill Again: Refrigerate the cookies until the chocolate has hardened, about 10-15 minutes.
