  • ½ cup sourdough discard (unfed)
  • ½ cup plain Greek yogurt (or regular yogurt)
  • 1 cup all-purpose flour (plus more for dusting)

Optional Add-ins:

 

  • ½ teaspoon salt (for extra flavor)
  • 1 teaspoon garlic powder or minced garlic
  • 1 teaspoon dried herbs (oregano, thyme, or rosemary)
  • 1 tablespoon olive oil or melted butter (for brushing)


Instructions

  • Mix the Dough – In a bowl, combine sourdough discard, yogurt, and flour. Add salt, garlic, and herbs if using. Mix until a soft dough forms. If sticky, add a little more flour.
  • Knead & Rest – Lightly knead on a floured surface for 1–2 minutes until smooth. Let it rest for 5–10 minutes.
  • Divide & Roll – Divide the dough into 4–6 pieces. Roll each into a thin round or oval (about ⅛-inch thick).
  • Cook the Flatbreads – Heat a dry skillet over medium-high heat. Cook each flatbread for 1–2 minutes per side until golden brown with bubbles forming.

 

  • Brush & Serve – While warm, brush with olive oil or melted butter. Serve immediately and enjoy!
