Description

This Apple and Cheddar Soup is the ultimate fall comfort in a bowl! It’s a velvety blend of tart apples and sharp cheddar cheese, perfectly balanced with savory herbs and creamy broth. This soup comes together in just 30 minutes, making it an easy, cozy meal for any cool autumn evening. Deliciously unique and incredibly satisfying!

Ingredients

Scale
  • 2 apples (peeled and chopped)
  • 1 onion (chopped)
  • 2 cups sharp cheddar cheese (shredded)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  • Add the apples and thyme, and cook for another 5 minutes until the apples soften.
  • Pour in the chicken broth, bring to a boil, then reduce the heat and simmer for 15 minutes.
  • Blend the soup until smooth using an immersion blender or in batches with a regular blender.
  • Stir in the shredded cheddar cheese and heavy cream, cooking on low heat until the cheese melts and the soup is creamy.
  • Season with salt and pepper to taste, and serve hot!

Notes

  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • Use Granny Smith or Honeycrisp apples for the perfect balance of sweet and tart.
  • If you like a little heat, add a pinch of cayenne pepper or smoked paprika to the soup.
  • This soup freezes well—store in the freezer for up to 3 months.
