These apple cider muffins are moist, tender, and bursting with the flavor of fresh apple cider. Topped with a cinnamon sugar crunch, they’re a perfect fall treat for breakfast or an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup apple cider
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Topping:

  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon
  • Melted butter for brushing

Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • In a separate bowl, whisk together apple cider, oil, sugar, eggs, and vanilla until combined.
  • Stir the wet ingredients into the dry mixture until just combined.
  • Divide batter into the muffin cups, filling each about ¾ full.
  • Bake for 15-20 minutes, until a toothpick inserted comes out clean.
  • Brush tops of warm muffins with melted butter. In a small bowl, mix cinnamon and sugar, then sprinkle over muffins.

  • Swap apple cider with apple juice for a milder flavor.
  • Add diced apples or chopped nuts for extra texture.
