- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup apple cider
- ½ cup vegetable oil
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping:
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- Melted butter for brushing
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk together apple cider, oil, sugar, eggs, and vanilla until combined.
- Stir the wet ingredients into the dry mixture until just combined.
- Divide batter into the muffin cups, filling each about ¾ full.
- Bake for 15-20 minutes, until a toothpick inserted comes out clean.
- Brush tops of warm muffins with melted butter. In a small bowl, mix cinnamon and sugar, then sprinkle over muffins.

- Swap apple cider with apple juice for a milder flavor.
- Add diced apples or chopped nuts for extra texture.
