For the Mushrooms:
- 16 large button or cremini mushrooms, stems removed
- 4 oz goat cheese, softened
- 1/4 cup dried cranberries, chopped
- 1/4 cup baby spinach, finely chopped
- 2 tbsp walnuts, finely chopped (optional)
- 1 tbsp fresh thyme, chopped
- 1 tbsp olive oil
- Salt and pepper, to taste
For the Balsamic Glaze:
- 1/4 cup balsamic vinegar
- 1 tbsp honey
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Clean the mushrooms with a damp paper towel, then arrange them, cavity-side up, on the prepared baking sheet.
- In a mixing bowl, combine goat cheese, chopped cranberries, spinach, walnuts (if using), thyme, salt, and pepper. Mix until well combined.
- Spoon the goat cheese mixture into each mushroom cap, pressing gently to fill. Drizzle the mushrooms with olive oil.
- Bake for 20-25 minutes, or until the mushrooms are tender and the filling is slightly golden.
- Meanwhile, prepare the balsamic glaze by combining balsamic vinegar and honey in a small saucepan over medium heat. Simmer for 5-7 minutes, stirring occasionally, until the mixture reduces and thickens.
- Remove the mushrooms from the oven and drizzle with the balsamic glaze. Garnish with additional fresh thyme, if desired. Serve immediately.
Notes
- For a nut-free version, omit the walnuts.
- These mushrooms can be assembled ahead of time and baked just before serving.
- Substitute goat cheese with plant-based cream cheese for a vegan option.
