For the Dough:

  • 1/2 cup warm milk (110°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/2 cup mashed ripe bananas (about 1 large banana)
  • 1 large egg, room temperature
  • 1/4 cup unsalted butter, melted
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt

For the Filling:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 tablespoons milk (for desired consistency)

 


Instructions

  • Make the Dough:
    • In a small bowl, whisk together warm milk, sugar, and yeast. Let sit for 5-10 minutes until frothy.
    • In a large bowl, combine mashed banana, egg, melted butter, and the yeast mixture. Stir until smooth.
    • Gradually add the flour and salt, stirring until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth.
    • Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  • Prepare the Filling:
    • In a small bowl, mix softened butter, brown sugar, cinnamon, and nutmeg (optional) until well combined.
  • Roll and Fill:
    • Roll the risen dough into a rectangle (about 16×12 inches). Spread the filling evenly, leaving a small border.
    • Roll the dough into a log and cut into 12 even rolls.
  • Bake the Rolls:
    • Place the rolls in a greased 9×13-inch pan. Let rise for another 30 minutes.
    • Preheat oven to 350°F and bake for 20-25 minutes until golden brown.
  • Make the Glaze:
    • Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Add milk until you reach your desired consistency.
  • Glaze and Serve:
    • Spread the cream cheese glaze over the warm rolls and enjoy!

Notes

  • These rolls can be made ahead! Simply freeze after baking and reheat when ready to serve.
  • Add chopped nuts or chocolate chips to the filling for extra texture and flavor.
  • For an overnight option, prepare the dough and let the shaped rolls rise in the fridge overnight. Bake them fresh in the morning.
