  • 4 pork or beef sausages (or veggie sausages)
  • 4 large potatoes (Yukon Gold or Russet)
  • 3 tablespoons butter
  • ¼ cup heavy cream
  • 2 large onions (thinly sliced)
  • 2 cups beef broth (or vegetable broth)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper (to taste)
  • Fresh parsley (optional, for garnish)

Instructions

  • Cook the sausages: In a large skillet, brown the sausages over medium heat until fully cooked and golden, about 10-12 minutes. Remove and set aside.
  • Prepare the mashed potatoes: While sausages cook, peel and cube potatoes. Boil them in salted water until tender, about 15 minutes. Drain, then mash with butter, cream, salt, and pepper until smooth and creamy.
  • Caramelize the onions: In the same skillet used for the sausages, cook the sliced onions over low heat until golden and caramelized, about 10 minutes.
  • Make the gravy: Sprinkle flour over the onions, stirring to coat. Gradually add beef broth, whisking to avoid lumps. Stir in Worcestershire sauce, and let simmer until the gravy thickens, about 5 minutes.
  • Assemble: Serve the sausages over the mashed potatoes, and generously spoon the onion gravy on top. Garnish with parsley, if desired.
