Ingredients

  • 2 lb beef roast
  • 4 large potatoes (peeled and chopped)
  • 2 cups frozen corn
  • 1 cup beef broth, divided
  • 2 tbsp flour
  • 2 tbsp butter (for gravy)
  • 1/2 cup milk (for mashed potatoes)
  • 2 tbsp butter (for mashed potatoes)
  • Salt, pepper, garlic powder, and thyme to taste

Instructions

  • Preheat the oven to 325°F (160°C). Season the beef roast with salt, pepper, garlic powder, and thyme.
  • Sear the roast in a hot pan until browned on all sides. Transfer to a roasting pan, add 1/2 cup beef broth, cover with foil, and roast for 2-3 hours until tender.
  • While the beef roasts, boil peeled and chopped potatoes in salted water for 15-20 minutes. Drain and mash with milk, butter, salt, and pepper until creamy.
  • Cook frozen corn in boiling water for 5-7 minutes, drain, and set aside.
  • For the gravy, melt 2 tbsp butter in a small pan, stir in flour, and cook for 1 minute. Slowly add the remaining 1/2 cup beef broth, simmering until thickened. Season with salt and pepper.
  • Slice the roast and serve with mashed potatoes, corn, and gravy on top. Enjoy!

Notes

  • You can use fresh corn instead of frozen.
  • If your gravy is too thick, add a splash of beef broth to thin it out.
  • For even more flavor, try adding fresh rosemary or bay leaves while roasting the beef.
