No-bake Biscoff truffles are a decadent four-ingredient dessert featuring spiced Biscoff cookies, smooth cream cheese, and a luscious white chocolate coating. Perfect for holidays, parties, or an anytime indulgence, these easy truffles require no oven and deliver big flavor in every bite!


Ingredients

  • 1 8-ounce cream cheese, softened
  • 1012 ounces white chocolate, finely chopped
  • 8.8 ounces Biscoff cookies (approximately 32 cookies)
  • 2 tablespoons Biscoff cookie butter (optional, for drizzling)

Instructions

  • Line a baking sheet with parchment paper and set aside.
  • Add the Biscoff cookies to a food processor and pulse until finely ground.
  • Microwave ¼ cup of cookie butter for 15-20 seconds. Stir well, then add it to the food processor along with the cream cheese. Pulse until fully combined into a thick dough.
  • Scoop and roll the dough into 1-inch balls, placing them onto the prepared baking sheet. Chill in the refrigerator for at least 1 hour or in the freezer for 20 minutes.
  • Melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
  • Coat each chilled truffle by dipping it into the melted chocolate with a fork or dipping tool. Let the excess drip off before placing the coated truffles back on the baking sheet.
  • If desired, microwave 2 tablespoons of cookie butter for 15 seconds and drizzle over the truffles. Chill until set.
  • Store in the refrigerator until ready to serve.

  • Use high-quality white chocolate for smooth melting and a flawless coating.
  • Biscoff cookies come in 8.8-ounce packages, so you’ll need two packages to ensure enough cookies for crumbs.
  • Extra white chocolate is needed to ensure all truffles are coated properly.
