Description

This Cabbage Roll Soup delivers all the comforting flavors of classic cabbage rolls in an easy-to-make soup! Filled with seasoned ground beef, tender cabbage, carrots, rice, and a savory tomato broth, this hearty soup is perfect for cozy dinners without the fuss of rolling and baking. With just one pot and simple ingredients, it’s the ultimate weeknight meal that gets better with each bowl.

Ingredients

Scale
  • 2 teaspoons olive oil
  • Salt and pepper, to taste
  • 1 pound ground beef (90% lean)
  • 1 onion, finely diced
  • 2 teaspoons minced garlic
  • 4 cups green cabbage, coarsely chopped
  • 2 carrots, peeled, quartered, and sliced
  • 4 cups beef broth
  • 3 cans (8 ounces each) tomato sauce
  • ½ cup uncooked long-grain rice
  • 1 bay leaf
  • 3 tablespoons brown sugar
  • 2 tablespoons parsley, chopped (for garnish)

Instructions

  • Cook the Beef: Heat olive oil in a large pot over medium-high heat. Add ground beef, seasoning with salt and pepper. Cook for 4-5 minutes, breaking up the meat until browned.
  • Add Aromatics: Add diced onion and minced garlic to the pot. Cook for 2-3 minutes until softened.
  • Combine Ingredients: Stir in chopped cabbage, carrots, beef broth, tomato sauce, rice, bay leaf, and brown sugar. Season with additional salt and pepper as needed.
  • Simmer: Bring to a gentle simmer and cook for 25 minutes or until the rice is tender, stirring occasionally.
  • Finish and Serve: Remove the bay leaf. Garnish with parsley and serve warm.

Notes

  • Protein Swap: Substitute ground turkey or chicken for a lighter version.
  • Rice Options: Brown rice can replace white rice but will require 20 more minutes of cook time.
  • Storage Tips: Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
