Ingredients
Apple Mixture:
- 2 cups (200g) diced firm tart apples (Granny Smith or Honey Crisp)
- 2 tablespoons (30g) packed dark brown sugar

Cookie Dough:
- ½ cup (113g) unsalted butter, softened
- ½ cup (110g) packed dark brown sugar
- ¼ cup (50g) granulated sugar
- 1 teaspoon (5ml) pure vanilla extract
- 1 large egg, at room temperature
- 1 ⅓ cups (190g) all-purpose flour, sifted
- ½ teaspoon baking soda
- ½ teaspoon salt
Plus:
- Salted caramel sauce for drizzling
Instructions
- Prepare the Apple Mixture:
In a medium skillet, cook diced apples with brown sugar and cinnamon over medium heat for 5 minutes or until just softened. Set aside to cool completely. - Make the Cookie Dough:
In a large bowl, cream butter, brown sugar, granulated sugar, and vanilla until light and fluffy. Add the egg and mix until fully combined. - Combine Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the butter mixture until just combined. - Incorporate Apples:
Fold the cooled apple mixture into the dough in two stages, avoiding any excess liquid. Chill dough for 15–20 minutes if too soft. - Bake the Cookies:
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop dough onto the sheets, spacing about 2 inches apart. Bake for 10–12 minutes until edges are golden. Cool on the sheet for 2 minutes, then transfer to a wire rack. - Finish with Caramel:
