Cheddar Cups:
- 6 oz cheddar cheese, shredded
Avocado Feta Mousse:
- 2 ripe avocados
- ¼ cup feta cheese
- 1 tbsp lime juice
- ¼ tsp black pepper
Baked Kale:
- 1 ½ cups kale, washed and torn
- 1 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a muffin tin with oil.
- On a parchment-lined baking sheet, arrange small mounds of shredded cheddar (1 tablespoon each). Flatten slightly into circles.
- Bake for 8-10 minutes, or until the cheese is golden and bubbly.
- Let cool for 30-60 seconds, then press the cheese rounds into the muffin tin to form cups. Let cool completely.
- In a blender or food processor, combine avocados, feta cheese, lime juice, and black pepper. Blend until smooth and creamy.
- Toss kale with olive oil and bake on a parchment-lined baking sheet for 5-7 minutes, or until crispy.
- Spoon the avocado mousse into the cooled cheddar cups. Top with crispy kale. Serve immediately.
