With tender chicken, creamy salsa-infused cream cheese, and melted shredded cheese, this dish is a crowd-pleaser that’s perfect for busy weeknights. Plus, it’s versatile—serve it alone, with rice, or in a tortilla for a complete meal. Let’s get cooking!

Ingredients

4-5 thinly sliced chicken breasts (about 2 lbs)

    8 oz softened cream cheese

1/3 cup salsa (mild, medium, or hot—your choice!)

1/2 packet fajita seasoning (about 1 oz)

2 large bell peppers (sliced—use a mix of colors for extra vibrancy)

1-2 cups shredded cheese (Mexican blend or cheddar)

    Optional Garnishes:

        Fresh cilantro

        Sliced green onions

        Sour cream

        Guacamole

Instructions

1. Preheat & Prep

Preheat your oven to 375°F (190°C).

Grease a 9×13-inch baking dish with cooking spray or a little oil.

2. Layer the Chicken

Place the thinly sliced chicken breasts in a single layer at the bottom of the baking dish.

3. Make the Cream Cheese Mixture

In a medium bowl, mix together the softened cream cheese, salsa, and fajita seasoning until smooth and well combined.

4. Assemble the Dish

Spread the cream cheese mixture evenly over the chicken.

Top with the sliced bell peppers and shredded cheese.

Pro Tip: If you’re using thick chicken breasts, add the shredded cheese halfway through baking to prevent it from burning.

5. Bake

Bake uncovered on the center rack for 20-45 minutes, depending on the size and thickness of your chicken. The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbly.

6. Serve & Enjoy

Let the dish cool for 5 minutes, then garnish with fresh cilantro, green onions, or a dollop of sour cream if desired.

Serve alone, with Spanish rice, cauliflower rice, or in tortillas for a complete meal.
