  • 1 lb ground beef
  • 4 medium Russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups whole milk
  • 4 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • ½ cup heavy cream (optional)
  • Salt, pepper, paprika, and cayenne (to taste)
  • Optional toppings: crumbled bacon, green onions, extra cheese

Instructions

  • In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat and set aside.
  • Melt butter in the same pot, add diced onion and garlic, and sauté for 2-3 minutes until fragrant.
  • Sprinkle flour over the onion mixture, stirring to form a roux. Cook for 1-2 minutes.
  • Gradually whisk in milk and broth, ensuring a smooth consistency.
  • Stir in potatoes, cooked ground beef, and seasonings. Bring to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes, or until potatoes are tender.
  • Remove from heat and stir in shredded cheddar cheese until fully melted. If using heavy cream, add it now and mix well. Adjust seasonings to taste.
  • Serve hot with your favorite toppings, such as crumbled bacon or chopped green onions.

Notes

  • For a chunkier texture, use a potato masher to lightly mash some of the potatoes.
  • Swap cheddar cheese for Monterey Jack, Gouda, or a cheese blend for a different flavor.
