Description

Cherry Pie Bars bring you the flavors of classic cherry pie in a simple, sharable form! With a buttery crust, tangy cherry filling, and a sweet almond glaze, these bars are perfect for gatherings, holidays, or an easy dessert to enjoy at home. Ready in just over an hour, this recipe is quick, delicious, and a total crowd-pleaser.

Ingredients

Scale

For the Bars:

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 2 cans (21 oz each) cherry pie filling

For the Glaze:

  • 1 cup powdered sugar
  • ½ tsp vanilla extract
  • ½ tsp almond extract
  • 2 tbsp milk

Instructions

  • Preheat Oven: Set the oven to 350°F (175°C). Lightly spray a 15x10x1-inch pan with non-stick spray.
  • Cream Butter & Sugar: In a large mixing bowl, cream the butter and sugar until light and fluffy.
  • Add Eggs: Beat in the eggs one at a time. Add vanilla and almond extracts, stirring until combined.
  • Combine Dry Ingredients: In another bowl, whisk together flour and salt. Gradually add the dry mixture to the butter mixture, mixing until well combined.
  • Assemble Bars: Spread 3 cups of batter on the bottom of the prepared pan. Evenly spread the cherry pie filling over the batter, then drop spoonfuls of the remaining batter over the cherry layer.
  • Bake: Bake for 30-35 minutes, or until a toothpick comes out clean. For a 9×13-inch pan, extend the baking time slightly.
  • Cool: Let the bars cool completely on a wire rack.
  • Prepare Glaze: In a small bowl, whisk together powdered sugar, vanilla extract, almond extract, and milk until smooth.
  • Drizzle & Serve: Once cooled, drizzle the glaze over the bars. Let it set, cut into squares, and enjoy!

Notes

  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week.
  • Variations: Try using blueberry or apple pie filling for a twist, or add lemon zest for extra tang.
  • Freezing: Freeze bars by wrapping them individually in plastic wrap and placing them in a freezer bag. Thaw in the fridge overnight before serving.
