  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 can (14 oz) crushed tomatoes
  • 1 cup chicken broth
  • 8 oz penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil, chopped, for garnish

Instructions

  1. Season chicken with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat and cook chicken until golden brown. Set aside.
  3. In the same skillet, add more oil if necessary and sauté garlic and onions until translucent.
  4. Add basil, oregano, and crushed tomatoes. Simmer for a few minutes.
  5. Pour in chicken broth and bring to a simmer.
  6. Cook penne pasta al dente, drain, and add to the skillet with the sauce.
  7. Return chicken to the skillet, mix well.
  8. Sprinkle with mozzarella and Parmesan cheese. Let the cheese melt.
  9. Garnish with fresh basil and serve hot.
