- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 can (14 oz) crushed tomatoes
- 1 cup chicken broth
- 8 oz penne pasta
- 1 cup shredded mozzarella cheese
- 1/4 cup freshly grated Parmesan cheese
- Fresh basil, chopped, for garnish
Instructions
- Season chicken with salt and pepper.
- In a large skillet, heat olive oil over medium heat and cook chicken until golden brown. Set aside.
- In the same skillet, add more oil if necessary and sauté garlic and onions until translucent.
- Add basil, oregano, and crushed tomatoes. Simmer for a few minutes.
- Pour in chicken broth and bring to a simmer.
- Cook penne pasta al dente, drain, and add to the skillet with the sauce.
- Return chicken to the skillet, mix well.
