Ingredients

Scale

Ingredients:

  • 1 box brownie mix, prepared and cooled
  • 1 cup unsalted butter, softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup mini chocolate chips
  • 2 cups semi-sweet chocolate chips (for coating)
  • 1 tbsp coconut oil

Instructions

Instructions:

  1. Prepare the brownie mix according to the package instructions and let the brownies cool completely.
  2. In a large bowl, cream together the softened butter, brown sugar, granulated sugar, and vanilla extract until light and fluffy.
  3. Gradually mix in the flour until well combined, then fold in the mini chocolate chips.
  4. Roll the cookie dough into 1-inch balls and slightly flatten them. Place a small square of brownie in the center of each flattened dough ball and roll it back into a ball.
  5. Freeze the brownie-filled cookie dough balls for 15-20 minutes to firm up.
  6. In a microwave-safe bowl, melt the semi-sweet chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  7. Dip each frozen brownie bomb into the melted chocolate, coating it completely. Place them on a parchment-lined baking sheet.
  8. Refrigerate for 20 minutes to allow the chocolate to set. Enjoy!

Notes

Notes:

  • For extra texture, sprinkle sea salt or crushed nuts on top of the chocolate coating before it sets.
  • To heat-treat the flour, bake it at 350°F for 5 minutes to make it safe for raw consumption.
  • Store in the fridge for up to 1 week or freeze for up to 3 months for a delicious treat anytime!
