Description

These Chocolate Chip Halloween Cookies are the perfect blend of sweet and spooky! Soft, buttery cookies loaded with chocolate chips, sandwiched with vanilla frosting, and rolled in festive Halloween sprinkles. Ready in just 20 minutes, they’re a fun treat for Halloween parties or cozy nights in.

Ingredients

Scale
  • 1/2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 cup butter (at room temperature)
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/4 cup chocolate chips
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Vanilla frosting (for sandwiching)
  • Halloween sprinkles (for rolling)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the brown sugar, granulated sugar, and butter until light and fluffy.
  • Crack in the egg and add a splash of vanilla. Mix until well combined.
  • Gradually add the flour mixture to the wet ingredients, mixing until just incorporated. Stir in the chocolate chips by hand.
  • Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet. Lightly flatten each ball with the back of a spoon.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow cookies to cool completely on a wire rack.
  • Once cooled, spread vanilla frosting on the flat side of half the cookies. Top with another cookie to create a sandwich, then roll the edges in Halloween sprinkles. Serve and enjoy!

Notes

  • For a crunchier cookie, bake an extra 1-2 minutes.
  • Make the dough ahead of time and freeze for quick, fresh-baked cookies later.
  • Experiment with different frosting flavors or add a dash of food coloring to match your Halloween theme!
  • Store the assembled cookie sandwiches in the fridge for a firmer frosting center.
