  • 6 fresh figs, stems removed, sliced into quarters or eighths
  • 1 pomegranate (yields about 1/4 cup seeds)
  • 1 avocado, peeled, cubed, and tossed with 1 teaspoon lemon juice
  • 2 ounces goat cheese, crumbled (optional)

Balsamic Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon honey or maple syrup
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Prepare the pomegranate seeds by rolling the fruit on the counter, cutting it in half, and smacking the back with a spoon to release the seeds.
  • In a jar, combine olive oil, balsamic vinegar, honey, garlic, Dijon mustard, salt, and pepper. Shake well until emulsified.
