Ingredients

  • 1 egg, whisked with 1 tablespoon water
  • ½ cup crumbled feta cheese
  • ¼ cup grated mozzarella cheese
  • 1 green onion, chopped
  • ½ teaspoon garlic salt
  • A few grates of nutmeg
  • 1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
  • 1 sheet puff pastry, defrosted

Instructions

  • Whisk the egg with water in a small bowl to make the egg wash. Set aside.
  • In a separate bowl, mix feta, mozzarella, green onion, garlic salt, and nutmeg.
  • Roll out the puff pastry on a lightly floured surface, smoothing any seams. Brush with egg wash.
  • Evenly spread the cheese mixture over the pastry, followed by spinach. Leave an inch at one short edge clear.
  • Roll the pastry tightly from the filled edge, forming a log. Slice into ½-¾-inch pieces.
  • Arrange slices on parchment-lined baking sheets. Chill in the fridge or freezer while preheating the oven to 400°F (200°C).
  • Bake for 15 minutes, or until golden and puffed.
  • Let cool slightly before serving.
