Ingredients
Scale
- 1 egg, whisked with 1 tablespoon water
- ½ cup crumbled feta cheese
- ¼ cup grated mozzarella cheese
- 1 green onion, chopped
- ½ teaspoon garlic salt
- A few grates of nutmeg
- 1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
- 1 sheet puff pastry, defrosted
Instructions
- Whisk the egg with water in a small bowl to make the egg wash. Set aside.
- In a separate bowl, mix feta, mozzarella, green onion, garlic salt, and nutmeg.
- Roll out the puff pastry on a lightly floured surface, smoothing any seams. Brush with egg wash.
- Evenly spread the cheese mixture over the pastry, followed by spinach. Leave an inch at one short edge clear.
- Roll the pastry tightly from the filled edge, forming a log. Slice into ½-¾-inch pieces.
- Arrange slices on parchment-lined baking sheets. Chill in the fridge or freezer while preheating the oven to 400°F (200°C).
- Bake for 15 minutes, or until golden and puffed.
- Let cool slightly before serving.
Notes
- Chill the pinwheels before baking to keep their shape.
- Use gluten-free puff pastry if needed.
- Swap mozzarella for Gruyère or Parmesan for a unique flavor twist.
- Store leftovers in an airtight container in the fridge for up to 3 days or freeze unbaked slices for up to a month.
