Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, mashed
  • 1/4 cup milk
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • In a large bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  • In another bowl, mix the melted butter with the granulated sugar. Add the eggs and vanilla extract, stirring until smooth.
  • Stir in the mashed bananas and milk until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared loaf pan.
  • In a small bowl, mix the brown sugar and ground cinnamon, then sprinkle evenly over the top of the batter.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Ensure your bananas are very ripe for the best flavor and moisture.
  • To prevent the bread from over-browning, cover the top with foil during the last 15 minutes of baking if needed.
  • For added flavor, mix in nuts or chocolate chips to the batter before baking.
