It’s a simple, no-fail recipe that yields the perfect shortbread cookie every time.
Ingredients
1 lb butter (salted)
1/2 cup granulated sugar
2 cups all-purpose flour
1/4 tsp salt
Instructions
Cream butter and sugar until light and fluffy. Add flour and salt, mixing until just combined. Dough should come together and pull from sides of the bowl as it mixes.
I roll between parchment or wax paper so as to not incorporate more flour which allows you to re roll the scraps. I use a Joseph Joseph rolling pin and roll them 1/4 in thick.
Bake at 300 F for 18-20 mins. Bake only until the edges are lightly golden. This will keep the cookie tender and crumbly.
My Lemon Glaze:
1 cup powdered sugar
2 tbsp freshly squeezed lemon juice
1 tsp vanilla extract
Mix only until combined and smooth. Do not over mix. Add more lemon juice to achieve desired consistency.
