  • 1 cup ube halaya (divided)
  • 1 cup grated coconut (fresh or unsweetened desiccated)
  • 1/2 cup coconut cream
  • 2 tablespoons sugar (for topping)
  • 1/4 cup shredded coconut (for garnish)

Instructions

  1. Prepare the yeast mixture: In a large bowl, dissolve the yeast in warm milk and allow it to sit until foamy, about 5 minutes.
  2. Make the dough: Add flour, sugar, salt, melted butter, eggs, and 1/2 cup ube halaya. Mix until well combined, then knead on a floured surface until smooth, about 10 minutes.
  3. First rise: Place dough in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
  4. Prepare the filling: Roll out the dough into a rectangle, spread remaining ube halaya, sprinkle grated coconut and sugar.
  5. Shape and second rise: Roll up the dough, slice into rolls, arrange in a baking dish, cover, and let rise until puffed, about 30 minutes.
  6. Bake: Preheat oven to 350°F. Brush rolls with coconut cream, sprinkle sugar, and bake for 25-30 minutes. Garnish with shredded coconut.
