Ingredients
Scale
- 1 pizza dough (store-bought or homemade)
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1 cup fresh cranberries
- 2 tablespoons honey
- 1 teaspoon balsamic vinegar
- 8 oz Brie cheese, rind removed and cut into small pieces
- 1/4 cup fresh arugula (optional, for garnish)
- 1 tablespoon fresh thyme leaves (optional, for garnish)
- Salt and freshly cracked black pepper, to taste
Instructions
- Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
- Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or pizza stone.
- Heat olive oil in a large skillet over medium heat. Add sliced onions, sugar, and salt. Cook, stirring occasionally, for 15-20 minutes until onions are golden and caramelized. Set aside.
- In a small saucepan, combine cranberries, honey, and balsamic vinegar. Cook over medium heat for 5-7 minutes, stirring occasionally, until cranberries burst and mixture thickens into a jam-like consistency. Remove from heat.
- Spread caramelized onions evenly over the prepared pizza dough. Add spoonfuls of the cranberry mixture and scatter Brie pieces on top.
- Bake for 12-15 minutes, or until the crust is golden brown and the Brie has melted.
- Remove from oven. Garnish with fresh arugula and thyme, if desired. Season with salt and freshly cracked black pepper. Serve immediately.
Notes
- For a gluten-free option, use gluten-free pizza dough or a cauliflower crust.
- Dried cranberries can substitute fresh ones—rehydrate them in warm water first.
- Feel free to experiment with toppings! Walnuts, prosciutto, or pomegranate seeds are great additions.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
