  • 1 tablespoon olive oil
  • 1 large onion, thinly sliced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 cup fresh cranberries

  • 1 teaspoon balsamic vinegar
  • 8 oz Brie cheese, rind removed and cut into small pieces
  • 1/4 cup fresh arugula (optional, for garnish)
  • 1 tablespoon fresh thyme leaves (optional, for garnish)
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  2. Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or pizza stone.
  3. Heat olive oil in a large skillet over medium heat. Add sliced onions, sugar, and salt. Cook, stirring occasionally, for 15-20 minutes until onions are golden and caramelized. Set aside.
  4. In a small saucepan, combine cranberries, honey, and balsamic vinegar. Cook over medium heat for 5-7 minutes, stirring occasionally, until cranberries burst and mixture thickens into a jam-like consistency. Remove from heat.
  5. Spread caramelized onions evenly over the prepared pizza dough. Add spoonfuls of the cranberry mixture and scatter Brie pieces on top.
  6. Bake for 12-15 minutes, or until the crust is golden brown and the Brie has melted.
  7. Remove from oven. Garnish with fresh arugula and thyme, if desired. Season with salt and freshly cracked black pepper. Serve immediately.
