Ingredients
Scale
- 2 lbs beef stew meat (or cubed chuck roast)
- 1 cup sliced mushrooms (white or cremini)
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup beef broth
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper (to taste)
Instructions
- Prep the Slow Cooker – Add the beef and sliced mushrooms to the slow cooker.
- Make the Sauce – In a bowl, mix together the cream of mushroom soup, beef broth, sour cream, garlic powder, onion powder, salt, and pepper.
- Pour & Cook – Pour the sauce over the beef and mushrooms. Cover and cook on low for 8 hours (or high for 4 hours) until the beef is tender.
- Stir & Serve – Give the sauce a good stir before serving. Enjoy over mashed potatoes, egg noodles, or rice for a cozy, satisfying meal!
Notes
- Want a richer sauce? Add a splash of Worcestershire sauce or a dash of red wine for extra depth.
- Prefer a thicker consistency? Stir in a cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water) during the last hour of cooking.
- No mushrooms? No problem! This dish is still amazing without them.
- Make it dairy-free by swapping sour cream for coconut cream or a dairy-free yogurt alternative.
