Description

This Creamy Garlic Bread Soup is a cozy, comforting soup inspired by the rich flavors of garlic bread. With a base of softened French bread, cream, parmesan, and aromatic garlic, every spoonful is creamy and indulgent. Topped with crunchy homemade garlic-butter croutons, it’s the ultimate comfort food for garlic bread lovers.

Ingredients

Scale

For the Garlic Bread Soup:

  • 14 ounces day-old French bread, cubed
  • 8 cups reduced-sodium chicken broth
  • 1 medium yellow onion, diced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 teaspoons olive oil
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • Dash of pepper
  • ½ cup heavy whipping cream
  • ½ cup grated parmesan cheese

For the Homemade Croutons:

  • 2 cups French bread, cut into 1″ cubes
  • 3 tablespoons melted butter
  • 1 tablespoon minced garlic
  • 1 teaspoon dried basil
  • ½ teaspoon salt

Instructions

Homemade Croutons:

  • Preheat the oven to 350°F (175°C). Cut French bread into 1″ cubes. In a small dish, melt butter and add minced garlic. Drizzle garlic butter over bread cubes, sprinkle with basil and salt, and toss to coat. Arrange bread cubes on a baking sheet in a single layer. Bake for 15 minutes, stirring halfway, until golden and crispy. Set aside.

Grlic Bread Soup:

  • In a large pot, heat olive oil over medium heat. Add diced onions, thyme, bay leaves, salt, and pepper, and cook for 7-8 minutes until the onions are golden. Add minced garlic and cook for an additional 30-60 seconds until fragrant. Pour in chicken broth, bring to a boil, then reduce to a simmer for 15 minutes. Remove bay leaves.
  • Whisk in cubed French bread and heavy whipping cream. Allow the bread to absorb the liquid for about 5 minutes at a simmer. Blend the soup using an immersion blender (or transfer in batches to a blender or food processor) until smooth. Whisk in grated parmesan until fully incorporated. Serve warm, topped with homemade croutons.

Notes

For the best texture, use day-old French bread or sourdough. To make this recipe vegetarian, substitute vegetable broth for chicken broth. Reheat gently, adding extra broth if needed to reach the desired consistency.
