Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta
    • Bring a large pot of salted water to a boil.
    • Add the penne and cook according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken
    • Season both sides of the chicken breasts with salt and pepper.
    • Heat olive oil in a large skillet over medium heat.
    • Add the chicken breasts and cook for 6-7 minutes on each side, until golden and cooked through. Remove and let rest, then slice.
  • Make the Creamy Parmesan Sauce
    • In the same skillet, sauté minced garlic for 1 minute.
    • Stir in heavy cream and bring to a simmer.
    • Add Parmesan and Italian seasoning, stirring until the cheese melts and the sauce is creamy. Season with salt and pepper to taste.
  • Combine Pasta and Sauce
    • Toss the cooked pasta in the creamy sauce until fully coated.
  • Serve
    • Place sliced chicken over the pasta and garnish with fresh parsley. Serve hot and enjoy!

Notes

  • For added flavor, sauté some spinach or mushrooms with the garlic in the sauce.
  • If the sauce becomes too thick, add a splash of reserved pasta water to thin it out.
  • You can swap out penne for other pasta shapes like rigatoni or fettuccine.
