Instructions

  • Sauté the Sausage and Vegetables:
    • Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it into small pieces, and cook until browned.
    • Add diced onion and sauté until translucent, about 3–4 minutes. Stir in garlic and cook for an additional minute.
  • Add Broth and Tomatoes:
    • Pour in chicken broth and add drained diced tomatoes. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  • Cook the Pasta:
    • Once boiling, add the ditalini pasta. Lower the heat to a simmer and cook for 8–10 minutes, stirring occasionally, until the pasta is al dente.
  • Incorporate Cream and Cheese:
    • Stir in softened cream cheese until fully melted. Add heavy cream and Parmesan cheese, stirring until the soup is creamy and the cheese is melted.
  • Adjust and Serve:
    • Taste and adjust seasoning as needed. Ladle soup into bowls, garnish with chopped parsley, and serve warm.
