  • 1 lb crawfish tails, cooked and chopped

  • 1 large egg, beaten
  • ½ cup whole milk
  • 2 tbsp chopped green onions
  • Vegetable oil, for frying

For the Jalapeño Cheddar Dip:

  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  • Prepare the Batter:
    In a large bowl, combine the flour, baking powder, garlic powder, onion powder, and cayenne pepper. Stir in the crawfish tails, beaten egg, milk, and green onions until a thick batter forms.
  • Heat the Oil:
    Pour about 2 inches of vegetable oil into a deep skillet or pot and heat to 350°F.
  • Fry the Beignets:
    Scoop the batter into small balls (1-2 tablespoons each) and carefully drop into the hot oil. Fry in batches for 3-4 minutes, turning occasionally, until golden brown. Remove with a slotted spoon and drain on paper towels.
  • Make the Dip:
    In a small bowl, mix the cheddar cheese, sour cream, mayonnaise, diced jalapeño, lime juice, garlic powder, salt, and pepper until well combined.
  • Serve:
    Plate the crispy beignets and serve warm with the jalapeño cheddar dip on the side. Enjoy!

  • If you prefer less spice, omit the cayenne pepper and remove the seeds from the jalapeño.
