Perfect for breakfast, brunch, or as a crowd-pleasing snack! They’re quick to make, wonderfully crispy on the outside, and bursting with flavor inside.


Ingredients

  • 2 cups shredded hashbrowns, thawed if frozen
  • 1/2 pound breakfast sausage (mild or spicy, as preferred)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/4 cup diced onions (optional)
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder (optional)
  • Optional garnishes: fresh parsley or chives


Instructions

  • Preheat the oven to 400°F (200°C). Spray a muffin tin with non-stick spray.
  • In a skillet, cook the sausage over medium heat until browned and fully cooked, breaking it into small pieces. Set aside to cool slightly.
  • In a large mixing bowl, combine hashbrowns, cooked sausage, cheddar cheese, eggs, onions, salt, pepper, and garlic powder. Stir until well mixed.
  • Spoon the mixture into the muffin tin cups, filling each about three-quarters full. Press down lightly to pack.
  • Bake for 18-20 minutes, or until the tops and edges are golden brown and crispy.
  • Let cool for a few minutes before removing from the tin. Garnish with parsley or chives if desired, and enjoy!
