Ingredients
- 1 1/2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup onion soup mix
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- 2 cups caramelized onions (store-bought or homemade)
- 1 cup shredded Swiss cheese
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion soup mix, eggs, milk, garlic powder, Worcestershire sauce, salt, and pepper. Mix gently to incorporate all ingredients, being careful not to overmix.
- Shape the Meatloaf: Transfer the meat mixture to a loaf pan or shape it directly into a loaf inside your crockpot.
- Add Caramelized Onions: Spread the caramelized onions evenly on top of the meatloaf.
- Cook in the Crockpot: Place the meatloaf in the crockpot, cover, and cook on low for 6-8 hours or high for 3-4 hours, until the meatloaf reaches an internal temperature of 160°F (71°C).
- Melt the Cheese: About 15 minutes before serving, sprinkle shredded Swiss cheese over the top of the meatloaf. Cover the crockpot and let the cheese melt.
- Serve: Carefully remove the meatloaf from the crockpot, let it rest for a few minutes, slice, and serve. Garnish with fresh parsley if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- For a twist, try using Gruyère or provolone instead of Swiss cheese.
- Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
- If you don’t have caramelized onions on hand, sautéed onions will also work, though caramelized onions add a deeper sweetness.
