Ingredients
Scale
For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cut into small cubes
For the Filling:
- 1 cup raspberry preserves
- 1 1/2 cups fresh raspberries
- 1 cup dark chocolate chips
For the Topping:
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/4 cup unsalted butter, chilled and cut into small cubes
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine the flour and sugar for the crust. Cut in the chilled butter cubes until the mixture resembles coarse crumbs.
- Press the mixture evenly into the prepared baking pan. Bake for 15 minutes or until lightly golden. Remove from the oven and set aside.
- Spread the raspberry preserves evenly over the baked crust.
- Sprinkle the fresh raspberries over the preserves.
- Scatter the dark chocolate chips evenly over the raspberries.
- In a medium bowl, combine the flour, granulated sugar, and brown sugar for the topping. Cut in the chilled butter cubes until the mixture forms coarse crumbs.
- Sprinkle the topping evenly over the chocolate and raspberries.
- Bake the bars for 25-30 minutes or until the topping is golden and the chocolate is melted.
- Allow the bars to cool completely in the pan on a wire rack. Once cooled, lift the bars out of the pan using the parchment paper overhang and cut into squares.
Notes
- Ensure your butter is cold for both the crust and topping for the best texture.
- Fresh raspberries are recommended, but thawed and drained frozen raspberries can be used in a pinch.
- Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
