  • 2 garlic cloves, peeled and minced
  • 1 cup Slow Cooker Basil Marinara
  • 1 pint crimini mushrooms, cleaned and sliced
  • 4 tablespoons kalamata olives, sliced
  • 4 ounces vegan cheese
  • A small bunch of fresh basil leaves, torn or chopped
  • 1 Easy Gluten-Free Vegan Pie Crust recipe

Instructions

  • Preheat your oven to 385°F (195°C).
  • Roll out the pie crust on a floured surface. Cut four rounds to match the size of your springform pans or ramekins—these will be your top crusts. Set aside.
  • Roll out the remaining dough into a square and cut it into four pieces, each large enough to line the bottom and sides of your pans.
  • Grease the springform pans or ramekins, and then line each with a piece of dough, pressing it gently to cover the bottom and sides.
  • Spoon a couple of tablespoons of marinara sauce into each pan, spreading it evenly across the bottom of the crust.
  • Add a layer of sliced mushrooms, filling the crust about halfway. Top with kalamata olives, shredded vegan cheese, and fresh basil.
  • Place the reserved top crusts over each pot pie, sealing the edges. Cut vents or carve designs into the top crusts for steam to escape.
  • Bake the pot pies on a baking sheet at 385°F for 35 minutes or until the crust is golden brown. If the crust begins to brown too quickly, cover it with foil.
  • Garnish with fresh basil and serve immediately. Enjoy!

  • You can prepare the pot pies a day in advance and store them in the fridge before baking.
