- 1 cup granulated sugar
- 1/2 cup butter, softened
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup milk
- 1/2 cup rainbow sprinkles (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, then stir in the vanilla extract and sour cream.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk until smooth.
- Gently fold in the rainbow sprinkles, being careful not to overmix.
- Pour the batter into the prepared loaf pan. Top with extra sprinkles.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and serve!
Notes
- For the best sprinkle effect, use “jimmies” (long, rod-like sprinkles) as they tend not to bleed colors into the batter.
- This bread can be frozen in slices for up to 2 months. Thaw at room temperature before serving.
