  • 2 ¼ cups granulated sugar
  • ½ cup water
  • ½ cup light corn syrup
  • 1/8 tsp salt
  • ½ cup chopped pecans
  • 1 tsp vanilla extract

Instructions

  • Line a large cookie sheet with parchment paper and set aside.
  • In a large saucepan, combine sugar, water, corn syrup, and salt. Cook over medium heat, stirring occasionally, until the mixture reaches 260°F on a candy thermometer (about 7-10 minutes).
  • While the candy cooks, beat the egg whites in a stand mixer or with an electric mixer on high speed until stiff peaks form.
  • Once the candy mixture reaches 260°F, remove it from the heat. With the mixer running on high, slowly pour the hot candy into the egg whites in a thin, steady stream over 2-3 minutes.
  • Beat the mixture on high until it loses its gloss and holds its shape, about 6-10 minutes. Stir in the chopped pecans and vanilla extract.
  • Using buttered spoons, quickly drop rounded tablespoonfuls of the mixture onto the prepared parchment paper. For a decorative touch, use the back of one spoon to create a soft curl on top of the candy.
  • Allow the candy to set at room temperature until dry to the touch, which may take overnight depending on humidity.

Notes

  • Test a small drop of candy on the parchment before scooping full portions. If the drop doesn’t hold its shape, continue beating.
