These soft, fluffy muffins are perfect for breakfast, snacks, or dessert! Works with or without an oven—just a stovetop pan (kawali method). Customize with your favorite flavors!

Ingredients (Makes ~18 muffins)

  • 4 cups all-purpose flour
  • 4 tsp baking powder
  • 4 large eggs
  • 1¼ cups sugar
  • 2 tsp vanilla extract (or other essence: almond, lemon, etc.)
  • 2 cups evaporated milk (or fresh milk)
  • 1 cup vegetable oil

Instructions

1. Prepare the Batter

  • In a large bowl, cream together sugar, eggs, and oil until smooth.
  • Add vanilla extract and milk, mixing well.
  • In another bowl, whisk flour + baking powder. Gradually add to wet ingredients, 1 cup at a time, mixing until just combined (don’t overmix).

2. Choose Your Cooking Method

Oven Method
  • Preheat oven to 180°C (350°F).
  • Grease a muffin pan or line with paper cups.
  • Fill cups ¾ full with batter.
  • Bake 20 minutes at 175°C (350°F) until golden and a toothpick comes out clean.
No-Oven (Kawali/Stovetop Method)
  1. Preheat a deep pan (kawali) with a tight-fitting lid over low heat for 15 mins.
  2. Grease muffin molds (or use heat-safe cups) and fill ¾ full with batter.
  3. Place molds in the pan, cover with lid, and bake 25-30 mins on low heat (check at 20 mins).

Tips for Perfect Muffins

Fluffy Texture: Don’t overmix—just combine until no dry flour remains.
Custom Flavors: Add chocolate chips, blueberries, or nuts (fold in last).
Storage: Keep in an airtight container for 3 days, or freeze for 1 month.
