1 cup (2 sticks) unsalted butter, room temperature
¾ cup granulated sugar
¾ cup packed light brown sugar
2 large eggs
1 ½ tsp vanilla extract
3 cups all-purpose flour
2 ½ tsp baking powder
¼ tsp salt
1 ¼ cups Fruity Pebbles cereal

 


Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Cream Butter and Sugars

In the bowl of a stand mixer (or a large bowl with a hand mixer), cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
Step 3: Add Eggs and Vanilla

Add the eggs and vanilla extract, and beat until smooth and well combined.
Step 4: Mix Dry Ingredients

In a separate medium bowl, whisk together the flour, baking powder, and salt.
Step 5: Combine Wet and Dry Ingredients

With the mixer on low, gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to overmix.
Step 6: Add Fruity Pebbles

Using a wooden spoon, gently fold in the Fruity Pebbles cereal until evenly distributed throughout the dough.
Step 7: Chill the Dough

Chill the dough in the refrigerator for about 15 minutes. This helps prevent the cookies from spreading too much while baking.
Step 8: Scoop and Bake

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are just golden.
Step 9: Cool and Serve

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
