Ingredients

  • 2 boneless chicken breasts
  • 2 cups cherry tomatoes
  • 1 ball of burrata cheese
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Fresh basil leaves, torn
  • Salt & pepper, to taste
  • Balsamic glaze (optional)

Instructions

  • Prep the Chicken: Rub chicken breasts with 1 tablespoon of olive oil. Season generously with salt and pepper.
  • Cook the Burst Tomatoes: Heat a skillet over medium heat. Add 1 tablespoon of olive oil and minced garlic. Cook for 1-2 minutes until fragrant, then add cherry tomatoes. Cook for 5-7 minutes, stirring occasionally, until they start to burst. Set aside.
  • Grill the Chicken: Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side until fully cooked and golden brown.
  • Assemble the Dish: Place the grilled chicken on a plate. Spoon the burst cherry tomatoes and their juices around the chicken.
  • Add Burrata & Garnish: Tear the burrata and place it on top of the chicken. Drizzle with olive oil or balsamic glaze, sprinkle with torn fresh basil, and serve!

Notes

  • For added flavor, marinate the chicken in olive oil, garlic, and herbs for 30 minutes before grilling.
  • Mozzarella can be substituted if burrata isn’t available.
