  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 12 teaspoons pickle relish with juice
  • Salt and pepper, to taste
  • 12 black olives (for spider eggs)
  • ½ teaspoon smoked paprika (for pumpkin eggs)
  • Chives (for pumpkin stems)

Instructions

  • Hard boil the eggs: Place 6 eggs in a large saucepan and cover with cold water. Bring to a boil on high heat, cover, and cook for 6 minutes. Transfer to ice water to cool, then peel the eggs.
  • Prepare the filling: Slice eggs in half and remove the yolks. In a bowl, mix the yolks with mayonnaise, mustard, pickle relish, salt, and pepper. Mash until smooth. For pumpkin eggs, add smoked paprika.
  • Fill the eggs: Spoon or pipe the yolk mixture back into the egg whites.
  • Decorate: For spider eggs, place half an olive on top for the body and slice the other half into legs. For pumpkin eggs, add a chive for the stem and use a toothpick to create vertical lines.
  • Serve immediately or store in the refrigerator until ready to enjoy!

  • Make-ahead tip: You can boil the eggs and prepare the filling a day in advance. Store separately, then assemble before serving.
  • For best results, wait to add the olives and chives just before serving to keep them fresh.
