Description

This Hearty Chicken Bacon Ranch Potato Bake is the perfect blend of cheesy, crispy, and savory goodness. Tender chicken, golden roasted potatoes, smoky bacon, and gooey melted cheddar come together in a one-pan dish that’s both easy to make and impossible to resist! Whether you’re feeding a crowd or prepping for the week, this recipe is a guaranteed winner.

Ingredients

Scale
  • 1.5 pounds baby gold potatoes (cut into bite-sized pieces)
  • 2 pounds boneless, skinless chicken breasts (cut into 1-inch cubes)
  • Salt and pepper, to taste
  • ½ cup prepared ranch dressing, divided
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon, crumbled
  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions

1️⃣ Preheat oven to 350°F (175°C).

2️⃣ Prepare potatoes – Wash and cut the baby gold potatoes into bite-sized pieces. Toss them in a bowl with half of the ranch dressing, salt, and pepper.

3️⃣ Arrange in baking dish – Spread the seasoned potatoes evenly in a greased 9×13-inch baking dish.

4️⃣ Prepare chicken – In the same bowl, toss the chicken cubes with the remaining ranch dressing, salt, and pepper.

5️⃣ Layer chicken over potatoes in the baking dish.

6️⃣ Cover with foil and bake for 45 minutes.

7️⃣ Add cheese and bacon – Remove the foil, sprinkle shredded cheddar cheese and crumbled bacon over the top.

8️⃣ Bake uncovered for an additional 15 minutes until cheese is melted and bubbly.

9️⃣ Garnish & serve – Sprinkle with chopped green onions (if using) and let sit for a few minutes before serving.

Notes

Make it spicy – Add red pepper flakes or a dash of hot sauce for extra heat.
Swap the cheese – Try mozzarella, Colby Jack, or pepper jack for a twist.
Use turkey bacon for a lighter option.
Meal prep friendly – Store leftovers in an airtight container for up to 4 days.
