Description

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh cranberries (or frozen)
  • 1/4 cup honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp ground ginger
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small saucepan, combine cranberries, honey, balsamic vinegar, soy sauce, Dijon mustard, garlic powder, and ground ginger. Bring to a simmer over medium heat, stirring occasionally. Cook for 10-12 minutes until cranberries burst and sauce thickens. Remove from heat.
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Season salmon fillets with salt and pepper. Sear salmon for 2-3 minutes per side until golden brown.
  • Transfer skillet to the oven and bake for 8-10 minutes, or until the salmon flakes easily with a fork.
  • During the last 2-3 minutes of baking, spoon cranberry glaze over the salmon, allowing it to caramelize slightly.
  • Remove from the oven, drizzle with remaining cranberry glaze, and garnish with fresh parsley. Serve with lemon wedges for extra brightness.

Notes

  • Frozen cranberries can be used if fresh ones aren’t available.
  • The cranberry glaze can be made up to 3 days in advance and reheated before serving.
  • For a smokier flavor, grill the salmon instead of baking it.
