Ingredients (Makes ~8 rolls)

  • 500g (4 cups) all-purpose flour (+ extra for dusting)
  • 300g (1¼ cups) warm water (adjust as needed)
  • 4g (1 tsp) brewer’s yeast (or active dry yeast)
  • 1 tbsp honey (or sugar)
  • 10g (1½ tsp) salt

Step-by-Step Instructions

1. Activate the Yeast

  • In a small bowl, mix warm water, honey, and yeast. Let sit 5-10 mins until bubbly.

2. Make the Dough

  • In a large bowl, combine flour and salt.
  • Pour in the yeast mixture and stir until a shaggy dough forms.
  • Knead 5-7 mins (by hand or mixer) until smooth and slightly sticky.

3. First Rise (Slow Fermentation)

  • Cover dough and refrigerate 12+ hours (or leave at room temp for 2-3 hours).

4. Shape the Rolls

  • Divide dough into 8 equal pieces (~100g each).
  • Roll into balls, place on a floured tray, and cover. Let rise 1 hour.

5. Bake for Perfect Crust

  • Preheat oven to 230°C (450°F) with a cast-iron pan of boiling water inside (for steam).
  • Score rolls with a sharp knife, dust with flour, and bake 10 mins.
  • Remove water pan, then bake 8-10 more mins until golden.

Pro Tips

Extra Crispy? Spritz rolls with water before baking.
Softer Crust? Brush with butter after baking.
Storage: Keep in a paper bag for 2 days or freeze for 1 month.

Ingredients

500 grams of all purpose flour


◾️300 grams of water – you might need more flour .. the dough should be little sticky


◾️4 grams of brewer’s yeast – you can use active dry yeast if you cant find brewers yeast.


◾️1 tablespoon of honey






Instructions


◾️
Dissolve the yeast in the water with the honey.
◾️Add the mixture to the flour and start mixing.
◾️Then add the salt and form a soft and homogeneous dough.
◾️Let the dough rise for 12 hours in the fridge.
◾️Then divide it into equal pieces.
◾️Form the rolls and leave to rest for 1 hour.
◾️Make a side cut on each sandwich and sprinkle some flour.
◾️Bake at 230 ° for 10 minutes with a saucepan of water.
◾️Then remove the saucepan and cook until golden brown.
