Homemade Mexican Pizzas Ingredients: 

For the Savory Taco Meat:

  • 1 tablespoon canola oil
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon kosher salt
  • 1/2 cup water

For the Mexican Pizzas:

  • 8 (6-inch) flour tortillas
  • 1 cup refried beans
  • 2 cups shredded Monterrey jack and cheddar cheese blend, divided
  • 1/2 cup enchilada sauce
  • 1/4 cup diced fresh tomato
  • 1/4 cup sliced jalapeño peppers
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup sour cream

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat the canola oil over medium-high heat. Add the ground beef and cook until it’s browned, no longer pink, and any excess grease has cooked down. This should take about 8 to 10 minutes.
  3. In a small bowl, mix together the chili powder, garlic powder, ground cumin, paprika, and kosher salt. Pour the seasoning mix and water over the beef, stirring well to combine.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer until the liquid reduces, approximately 5 minutes.
  5. Place four tortillas on the prepared baking sheet. Spread each tortilla with an even layer of refried beans.
  6. Top the beans on each tortilla with a fourth of the seasoned ground beef mixture and then sprinkle each with 1/4 cup of the shredded cheese. Cover each with a second tortilla.
  7. Bake the pizzas in the preheated oven until the tortillas are crisp on top, about 10 minutes.
  8. Remove the pizzas from the oven and spread 2 tablespoons of enchilada sauce over the top of each tortilla. Then, add 1/4 cup of the remaining shredded cheese on each pizza.
  9. Top the cheese on each pizza with a tablespoon of diced tomatoes and four slices of jalapeño peppers.
  10. Return the pizzas to the oven and bake until the cheese is melted, for another 8 to 10 minutes.
  11. Allow the pizzas to cool slightly before topping each with a dollop of sour cream and a sprinkling of chopped fresh cilantro.
  12. Slice each pizza into four slices and savor the flavor fiesta!
