Description

This Homemade Reuben Bake is a delicious twist on the classic Reuben sandwich. Layers of savory corned beef, Swiss cheese, tangy sauerkraut, and sweet Russian dressing are wrapped in buttery crescent roll dough and baked to golden perfection. It’s quick, easy, and perfect for feeding a crowd! Serve this comforting bake as a main dish for family dinners, potlucks, or game days!

Ingredients

Scale
  • 1 can refrigerated crescent roll dough (8 oz)
  • 1/2 lb sliced corned beef or pastrami
  • 1/2 lb sliced Swiss cheese
  • 1 cup sauerkraut, drained and squeezed dry
  • 1/2 cup Russian or Thousand Island dressing
  • 2 tablespoons Dijon mustard
  • 1 tablespoon butter, melted
  • 1 teaspoon caraway seeds (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9Ă—13-inch baking dish or line it with parchment paper.
  • Unroll half of the crescent roll dough and press it into the bottom of the prepared dish.
  • Spread Dijon mustard over the dough. Layer corned beef (or pastrami) evenly, followed by slices of Swiss cheese.
  • Evenly distribute the sauerkraut on top of the cheese.
  • Drizzle Russian or Thousand Island dressing over the sauerkraut.
  • Unroll the remaining crescent dough and place it on top, pressing the edges to seal.
  • Brush melted butter on the top layer and sprinkle with caraway seeds (optional).
  • Bake for 20-25 minutes, or until the dough is golden brown.
  • Remove from the oven and let cool for a few minutes. Slice into squares, garnish with parsley if desired, and serve warm.

Notes

  • Make sure to drain and squeeze the sauerkraut well to avoid excess moisture.
  • You can substitute puff pastry for crescent dough for a flakier texture.
  • To reheat leftovers, pop them in a 350°F oven to keep the dough crispy.
