- 3 ounces tomato paste (about ¼ cup)
- 4 cups chicken broth
- 1–2 cups water (or more to adjust consistency)
- 1 tablespoon Italian seasoning
- 1 teaspoon sea salt (or more to taste)
- Black pepper, to taste
- 8 ounces bowtie pasta (uncooked)
- Ricotta, mozzarella, parmesan, and fresh parsley for topping
Instructions
- Heat a large soup pot over medium-high heat. Add olive oil and let it shimmer.
- Add ground beef, onion, and garlic to the pot. Sauté until the beef is browned and cooked through, stirring occasionally. Drain excess fat if needed.
- Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper.
- Add the uncooked bowtie pasta. Bring the soup to a boil, then reduce the heat to a medium simmer. Cook for 10-15 minutes, stirring occasionally, until the pasta is tender.
- If the soup gets too thick, add more water or broth to adjust the consistency.
