Description

This cozy and flavorful lasagna soup is an easy one-pot meal that delivers all the classic lasagna flavors you love, without the hassle! With savory beef, rich tomato broth, tender pasta, and a cheesy topping, it’s a quick and satisfying dish perfect for busy weeknights. Whether you’re feeding the family or meal prepping for the week, this soup will quickly become a favorite.

Ingredients

Scale
  • 12 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes, don’t drain
  • 1 (15-ounce) can tomato sauce (or tomato puree)
  • 3 ounces tomato paste (about ¼ cup)
  • 4 cups chicken broth
  • 12 cups water (or more to adjust consistency)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt (or more to taste)
  • Black pepper, to taste
  • 8 ounces bowtie pasta (uncooked)
  • Ricotta, mozzarella, parmesan, and fresh parsley for topping

Instructions

  • Heat a large soup pot over medium-high heat. Add olive oil and let it shimmer.
  • Add ground beef, onion, and garlic to the pot. Sauté until the beef is browned and cooked through, stirring occasionally. Drain excess fat if needed.
  • Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper.
  • Add the uncooked bowtie pasta. Bring the soup to a boil, then reduce the heat to a medium simmer. Cook for 10-15 minutes, stirring occasionally, until the pasta is tender.
  • If the soup gets too thick, add more water or broth to adjust the consistency.
  • Serve with a generous scoop of ricotta, shredded mozzarella, parmesan, and a sprinkle of fresh parsley. Enjoy!

Notes

  • Use sturdy pasta such as bowtie, rigatoni, or penne to prevent sogginess in leftovers.
  • You can swap the ground beef for ground turkey or Italian sausage for a twist.
  • This soup thickens as it cools, so add extra broth or water when reheating to bring it back to your desired consistency.
  • For a vegetarian version, omit the ground beef and use vegetable broth.
