Instructions

  • Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  • Make the Brownie Layer: In a microwave-safe bowl, melt the butter and semi-sweet chocolate chips in 30-second intervals, stirring well after each interval until smooth and combined. Stir in the granulated sugar until well combined. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract. Fold in the flour and salt until just combined. Do not overmix. Pour the brownie batter into the prepared baking pan and spread it evenly.
  • Bake the Brownies: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let it cool completely in the pan on a wire rack.
  • Make the Caramel Layer: In a microwave-safe bowl, combine the caramel bits (or caramel candies) and heavy cream. Microwave in 30-second intervals, stirring well after each interval, until the caramel is melted and smooth. Pour the caramel evenly over the cooled brownie layer. Spread with a spatula if needed to cover the entire surface.
  • Chill the Brownies: Place the brownies in the refrigerator while you prepare the chocolate ganache topping. This helps the caramel set slightly.
  • Make the Chocolate Ganache Topping: In a microwave-safe bowl, heat the heavy cream until it just begins to simmer (about 1 minute in the microwave). Add the semi-sweet chocolate chips to the hot cream. Let it sit for 1 minute to soften, then stir gently until smooth and all the chocolate is melted and combined with the cream.
  • Pour and Spread the Ganache: Pour the chocolate ganache over the chilled caramel layer, spreading it evenly with a spatula to cover the entire surface.
  • Chill and Serve: Refrigerate the brownies for at least 1 hour, or until the chocolate ganache is set. Once set, lift the brownies out of the pan using the parchment paper overhang. Cut into squares and serve. Store leftover Millionaire Brownies in an airtight container in the refrigerator for up to 5 days.
