Ingredients

  2 packs of muffin mix (any flavor—blueberry, chocolate chip, banana nut, etc.)

    1 large egg (adds structure and a little extra protein!)

    1 stick of butter (½ cup, melted)

    1 teaspoon vanilla extract (for extra flavor)

    Optional Mix-Ins: Chocolate chips, dried fruit, nuts, or sprinkles.


Instructions

1. Preheat & Prep

    Preheat your oven to 375°F (190°C).

    Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

2. Mix the Dough

    In a large mixing bowl, combine the 2 packs of muffin mix, 1 egg, melted butter, and vanilla extract.

    Stir until everything is well combined and a thick dough forms.

    If you’re adding mix-ins (like chocolate chips or dried fruit), fold them in now.

3. Scoop & Shape

    Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheet.

    Leave about 2 inches between each cookie to allow for spreading.

    Gently flatten each dough ball slightly with your fingers or the back of a spoon.

4. Bake

    Bake at 375°F (190°C) for 10 minutes, or until the edges are lightly golden.

    The cookies will still look soft in the center, but they’ll firm up as they cool.

5. Cool & Enjoy

    Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

    Serve to your little ones (or sneak a few for yourself—no judgment here!).
