Ingredients
- 8 oz cream cheese, softened
- ½ cup creamy peanut butter
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- ½ cup mini chocolate chips (optional)
- 1 cup chocolate chips (for coating)
- 1 tbsp coconut oil (optional, for melting chocolate)
Instructions
- Prepare the Mixture: In a large mixing bowl, combine softened cream cheese, peanut butter, powdered sugar, and vanilla extract. Mix until smooth. Stir in the graham cracker crumbs. If desired, fold in mini chocolate chips.
- Form the Balls: Roll the mixture into 1-inch balls using your hands. Place them on a parchment-lined baking sheet.
- Chill: Refrigerate the cheesecake balls for at least 30 minutes to firm up.
- Coat the Balls: Melt the chocolate chips with coconut oil (optional) in 30-second intervals in the microwave, stirring in between. Dip the chilled balls into the melted chocolate, ensuring they’re fully coated.
- Chill Again: Place the chocolate-coated balls back in the fridge for 15-20 minutes, or until the chocolate is set.
