  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/3 cup Nutella

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy. Add the egg, red food coloring, and vanilla, mixing until well combined.
  4. Gradually add the flour mixture to the wet ingredients alternately with the buttermilk, beginning and ending with the flour mixture. Stir until just combined.
  5. Take a tablespoon of the cookie dough, flatten it slightly, and place a teaspoon of Nutella in the center. Cover with another tablespoon of dough, seal the edges, and form into a cookie shape.
  6. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes. The cookies should be set but still soft. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
