Ingredients
Scale
- 1 lb chicken breasts, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 4 cups chicken broth
- 12 oz pasta (penne or rotini)
- 1 cup marinara sauce
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Fresh basil, for garnish (optional)
Instructions
- Cook Chicken: In a large pot, heat olive oil over medium heat. Add diced chicken, garlic, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until chicken is no longer pink.
- Add Broth and Pasta: Pour in chicken broth and bring to a boil. Stir in pasta and marinara sauce. Reduce heat to a simmer.
- Cook Pasta: Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
- Add Cheese: Remove from heat and stir in Parmesan and mozzarella until melted and creamy.
- Serve: Garnish with fresh basil, if desired. Serve hot and enjoy!
Notes
- Add vegetables like spinach or mushrooms for extra nutrients.
- For a spicier kick, add red pepper flakes while cooking the chicken.
- Leftovers can be stored in the refrigerator for up to 3 days. Reheat with a splash of broth to restore creaminess.
