Description

One-Pot Chicken Parmesan Pasta is a creamy, cheesy, and flavorful weeknight dinner that’s perfect for busy families. With tender chicken, pasta, marinara sauce, and gooey mozzarella all cooked in one pot, it’s a breeze to make and leaves you with minimal cleanup! Ready in under 30 minutes, this dish combines comfort and convenience in every bite.

Ingredients

Scale
  • 1 lb chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 4 cups chicken broth
  • 12 oz pasta (penne or rotini)
  • 1 cup marinara sauce
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil, for garnish (optional)

Instructions

  • Cook Chicken: In a large pot, heat olive oil over medium heat. Add diced chicken, garlic, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until chicken is no longer pink.
  • Add Broth and Pasta: Pour in chicken broth and bring to a boil. Stir in pasta and marinara sauce. Reduce heat to a simmer.
  • Cook Pasta: Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
  • Add Cheese: Remove from heat and stir in Parmesan and mozzarella until melted and creamy.
  • Serve: Garnish with fresh basil, if desired. Serve hot and enjoy!

Notes

  • Add vegetables like spinach or mushrooms for extra nutrients.
  • For a spicier kick, add red pepper flakes while cooking the chicken.
  • Leftovers can be stored in the refrigerator for up to 3 days. Reheat with a splash of broth to restore creaminess.
